unless they say, 99% is kosher. Most if not all chefs use it because it is easier to cook with. Sea Salt isnt used that often in day to day cooking and " gray "salt even less.

I'm addicted to Food Network! Everyone on there, except Michael Chiarello, uses Kosher salt. He uses grey salt.

Well, prepare to be educated. Kosher salt does not contain iodine. Table salt does. Iodine gives table salt a bitter aftertaste. Kosher doesn't. Sea Salt contains minerals which tend to give it a slight flavor. Sea salt from different areas have different tastes. For a middle of the road seasoning...most cooks use kosher salt. And as far as bigger flakes....most people use a mill and adjust the grind to their needs.
