Should I freeze bananas when they are ripe or overripe?
I use frozen bananas to make smoothies. I always wait until they are overripe, but it would be easier to do it when I buy them. If I let them sit, they often get bruises (I have to cut away) or even fruit flies. What do you think? Would the smoothies still taste as good?

Yes, you may even find that your smoothies are a little sweeter. As the banana over ripens, it develops a higher sugar content. In order to prevent bruising, you may want to buy a banana stand. They usually have a center post and a few hooks extending out for you to hang the bananas. That way the bananas won't get bruised by laying out on your counter.
Yes and can be used at anytime for bakeing. But leave them in their own peel

I always put my over ripe bananas in the frezzer.
I use them to make banana bread.
I've made 7 loaves in this week.
But when a banana is brown and has those spots, that means that the sugar is coming to the surface
It's begining to caramelize.
And that's what brings out the flavour of the fruit.
Use them however you want.

I freeze banana's all the time, I unpeel em & stick em in freezer baggies. No it doesn't matter as a matter of fact it, still taste like a banana. I freeze all fruit-banana's, strawberries, raspberries, blackberries, watermelon, musk melon, plankton (smaller sized banana's is all) then wheneverever I am making smoothies I just grab a couple handfuls of whatever I am in the mood for & toss em in the blender with any flavor of yogrut, couple ice cubies, a few spices, ( occasionly I throw in some flax seed). Instant smoothie with little or no effort & less ice. Excellent during hot weather can also add 1 oz. any kinda booze you like too. Have a good night. :0)
