I am just guessing but I bet they add vitamins to it somewhere during the processing. Instant rice is just cooked rice that has been dried so it must retain some nutritional value. I've included a link to show the different rices and their nutritional value.

yes! For the most part instant rice is rice that has been cooked and then dehydrated. when you put it in water it reabsorbs the water and you have rice. It will have a little less starch and nutrient than reg rice do to the fact it is the second time being cooked. It you want nutrition eat brown rice.
