Why does sour cream get ruinny water in it after being in fridge?

Why is it everytime i get my sour cream out of the fridge its filled with water? its very gross. it makes it hard for me to eat it. is there a way to prevent this condensation from occuring?

Separation is a natural phenomenon that occurs when sour cream is exposed to various temperatures. This separation of the whey is not harmful and you may gently stir the sour cream to re-blend it or pour the excess liquid out. To reduce the potential for separation, smooth the surface of the sour cream flat with a clean spoon prior to placing it into the refrigerator.

Just stir it! The water in the sour cream has separated and it doesn't hurt a thing, it just need stirred back in.

If your sour cream is doing this its a little old. The curds and whey are breaking from each other. By it in smaller portions and use it faster if you do not want this. Its not bad when it does this but to me it does taste funny after that.

The cold squeezes the milk solids and the water "whey" can only go up. Just mix it back in.
How long do you just store it??
Buy smaller tubs. use it up fast.

It's not condensation, it's separation. You've heard of curds and whey, right? Well, this is similar. If milk were not homogenized you would see separation there too. The liquid part of the milk in the sour cream (whey) separates from the solid part. It may not be very appealing to you but it is completely normal. And no, you can't stop it. You just have to stir it back in. It's just like seeing the oil on top of your peanut butter. It's a natural part of the product and you just have to mix it back together.
