Milk is composed of essentially two elements -- solids and whey. The solids are what is used to create cottage cheese and regular cheese, and are separated from the whey through the addition of rennet (an enzyme) and an acidic substance like vinegar.

Whey contains lactose, protein, vitamins and minerals, is watery and thin.

Whey is the liquid remaining after milk has been curdled and strained; it is a by-product of the manufacture of cheese.
