Can lemon grass be frozen?

I have been given a quantity of fresh spices from the Far East (Including Lemon Grass) and wondered if they could be frozen

Yes, of course it can. Just make sure it's as air tight as possible in a very cold freezer for up to 6 months.

yes you can freeze it in bags. When you need one you just take it out of the freezer and chop it - you don't need to de-frost it as it's easier to chop it when it's still frozen.
