Rocket Salad
Rocket Salad has been introduced from the Mediterranean region of Europe. It can be found in various soil types of the Edwards Plateau and South Texas Plains. It is an annual herb growing from 11 to 23 inches in height. The lower leaves are lobed, while the upper leaves have toothed edges. The flower is yellowish to white in color with brown or violet veins. The fruit is long (1/2 inch) and has a sword-like beak. Rocket Salad blooms year around. Also known as Arugula, it can be used in salads as a mustard green.

Ingredients
450g/1lb vine-grown cherry tomatoes, quartered
50g/2oz wild rocket, stalks removed
sea salt and freshly ground black pepper
3-4 tbsp good quality extra virgin oil



Method
1. Put the tomatoes into a bowl and toss with some salt and pepper.
Add the rocket leaves and toss together once more.
2. Pile the salad into the centre of 4 bowl-shaped plates and drizzle with the olive oil. Serve straight away.

Sounds like there must have been something wrong with your rocket salad - as rocket usually tastes really strong and shouldn't have been damp or squiblike!

If you put it in the toaster for about 5 mins you will find it tastes better :-)
