I ate at one today but, all I ate was like 4 plates full of steamed vegetables and fish and sushi. I did have like 3 veggie egg rolls, a crab puff and for dessert I had tapioca pudding and several slices of honey dew melon. So what is my damage

Heck, that was more of a good idea then you realize. Your body is thanking you for all of the vitamins and minerals you gave it yesterday. Way to go. No way were you bad, you were great! You should do exactly what you did last night once a week for a while and then write up a testimony on all of the god results you received!

A LOT. Don't forget the sodium levels! I would bet the average person eating at a chinese buffet eats at least two to three thousand calories at one meal. And probably 3 times the daily recommended value of sodium.

many range from 450 for half a plate of pork fried rice and tso chicken a whole plate 900 calories and more

Crazy calories at the Chines Buffet.
One thing to keep in mind is that although you were obviously careful to choose LOW FAT foods, LOW FAT does not mean LOW CALORIE. A full plate of just rice and vegetables, not counting sweet or greasy sauces, can run 500-800 calories depending on how high you pile it. Throw in a few low fat (NOT LOW CALORIE) shrimp and some naturally sweet melon and you are looking at somewhere between 2500-3500 calories--which is not bad since we are talking about stuffing oneself to the point of physical discomfort with four plates of food. Incidentally a 3500 calorie surplus is a full pound of weight gain in just a day. Portion control works. Buffets are suicide no matter what you eat. If you allow a cheat day to equal eat all you want no matter how much there is no point in trying. You can easily lose ALL the progress you made all week in just one day.
This may not be what people want to hear, but it's accurate and truthful. A food addict living in denial will just keep gaining back the weight he or she loses and wondering why.
