Simple and yet delicious! I like any combination of cheese, tomatoes, potatoes and mushrooms in mine. How about you?

The omelettes I like are: Mushroom, Cheese, Bacon, Cheese and onion and good old plain with Heinz tomato ketchup on.
Cheese, onions, green and red peppers and sometimes even small cubes of ham.
Where I live we call it tortella. I love it, and generally I don't like eggs at all. I like tradition Spanish tortella, which is just potato and onion but I also like it the way my husband makes it with mushrooms, bacon, onions, garlic, cheese and anything else he might happen to find around the kitchen that he thinks will work in there. He's the greatest cook in the world.
