Maybe it's tradition, and that's what sells best. Dunno. But I'd be interested to find out!

haha dunno... i'm guessing that vanilla is white to begin with, and the vanilla extract is brown because of the additives.

The amount of vanilla used for flavoring is too small to impart any coloring by itself. In the case of ice cream, it is naturally white. When artificial flavors are used (vanillin or ethyl vanillin), they are completely colorless.

Well, not EVERYTHING stays white. But its because there is such a small amount of the vanilla, it cant change the color to a point noticable.
