Lemon Coolers made by Sunshine. I live in Dallas & can sometimes still find them at some stores- I have to search for them! They are so yummy!

I found a site that says they are the actual recipe:
http://www.thecookingschool.com/index.ph...

If you make them, will you let me know how they turn out? Please, thanks!

Lemonheads?
OMG I thought you said candy and not cookie! lol!
Ok...so I searched now...does this sound like them...Cuz if it does, you can just make em!

2 eggs
1 cup sugar
2 teaspoons grated lemon peel
2 teaspoons lemon extract
1 1/3 cups all-purpose flour
1 teaspoon baking powder

Glaze
1 1/2 cups confectioners' sugar
1 to 2 tablespoons lemon juice

1. In a small mixing bowl, beat eggs until frothy. Beat in the sugar, lemon peel and extract. Combine flour and baking powder; gradually add to sugar mixture.

2. Drop by teaspoonfuls 2 inches apart onto baking sheets coated with nonstick cooking spray. Bake at 325°F for 10-12 minutes or until lightly browned. Cool completely on baking sheets before removing.

3. For glaze, in a small bowl, combine confectioners' sugar and enough of the lemon juice to achieve desired consistency; drizzle over the cookies.

Yield: 3 1/2 dozen

ME TOO ! ! ! ! WOW I THOUGHT THAT I WAS THE ONLY ONE IN THE WORLD THAT REMEMBERED THESE. My mom used to eat them with me but will not remember them.

They are called Mexican Wedding Cookies. Sometimes Wal-mart and other grocery stores carry them.....

Just like at Grandma's house.
You roll the dough, just so.

Hope this is it...they used to be called Lemon Coolers
****Enjoy****

2 sticks butter
1/3 cup granulated sugar
1/2 teaspoon vanilla
1/2 teaspoon lemon extract
2 cup flour

Coating:

1 cup powdered sugar
1/2 teaspoons Kool-Aid lemonade unsweetened drink mix powder
(mix these together in a bowl)

Cream butter, sugar and flavorings. Add flour and mix until a dough forms.
Roll into 1" balls and bake 1" apart on ungreased cookie sheet at 350°F degrees for 15-18 minutes (they won't be brown on top!).

While cookies are warm, toss them in the lemon powdered sugar mixture and put on a plate to cool.

Makes about 3 dozen melt-in-your-mouth cookies.

They were called lemon coolers-made by Sunshine. Unfortunately, I believe they have quit making them. But, if you bake...here is a recipe that mimics the taste. Worth a shot:
Ingredients
1/2 cup powdered sugar 1 1/2 cups cake flour
1/3 cup sugar 1 1/2 teaspoons baking powder
1/3 cup shortening 1 tablespoon water
1 egg 1 cup powdered sugar
1/2 teaspoon vanilla 1/2 teaspoon Unsweetened lemonade mix
1/8 teaspoon salt

Directions
1. Preheat oven to 325 degrees.
2. Cream together sugars, shortening, egg, vanilla, and salt in
a large bowl.
3. Add the flour and baking powder. Add 1 tablespoon of water and
continue mixing until dough forms a ball.
4. Roll dough into 3/4-inch balls and flatten slightly onto a
lightly greased cookie sheet. Bake for 15 to 18 minutes or until
cookies are light brown.
5. As cookies bake, combine 1 cup powdered sugar with the lemonade
drink mix in a large plastic bag and shake thoroughly to mix.
6. When the cookies are removed from the oven and while they are
hot, add 4 or 5 at a time to the bag and shake it until the cookies
are well coated. Repeat with the remaining cookies.

lemon bars??

3/4 cup sifted all purpose flour (3 ounces)
1/4 cup yellow cornmeal
Pinch of salt
1/8 teaspoon baking soda
2 tablespoons unsalted butter, at room temperature
1 cup sugar, divided
1 egg yolk
1 tablespoon nonfat yogurt
1/4 teaspoon vanilla
2 eggs
1 egg white
1/2 cup strained fresh lemon juice
Grated zest of 1 large lemon
1/4 cup all purpose flour
Powdered sugar from dusting

Position rack in lower third of oven and Preheat oven to 350 degrees. Spray a 13 by 9 inch pan lightly with vegetable oil spray.

Make the crust: Stir the 3/4 cup of flour, the corneal, salt and baking soda together with a whisk to combine. Set aside. In a medium mixing bowl, beat the butter until creamy. Add 1/3 cup of the sugar and beat at high speed for about one minute or until mixture loses its crumbly texture and begins to form a mass. Beat in the egg yolk, yogurt, and vanilla. Add the dry ingredients and beat on low speed just until combined. Scrape the bowl and beater. Knead the mixture briefly with your hands to mix thoroughly.

Press the dough evenly into the pan and prick all over with a skewer or fork. If pan is light weight, place on baking sheet. Bake until brown on top, about 20 to 25 minutes.

Make the topping: Whisk eggs and the egg white with the remaining sugar until combined. Whisk in the lemon juice and zest. Whisk in the 1/4 cup of flour. When crust is brown, turn oven temperature down to 300 degrees. Pour topping over hot crust and bake 15 to 20 minutes, or until topping barely jiggles in the center when you shake the pan gently back and forth. Cool on a rack. Chill before cutting into squares.

Serve cold or at room temperature (I like them cold) dusted with powdered sugar. They last a couple of days but are most delicious on the day they are baked. Do not freeze.

Yeah, they were called Lemon Coolers by Keebler and I don't think the elves make them any more. I've looked for them too.
