Its called freezer burn. Try putting the food in zip top bags and pressing the air out of it or get one of those food-sealers. Then again, you could just eat the food before it gets freezer burn. ; )

When food is frozen as a method of preservation thousands and thousands of water molecules within the steak form ice crystals. These water molecules prefer the most hospitable environment- the coldest place in your freezer. The molecules migrate from the steak to the coldest place they can find, which is often the side of your freezer. The loss of these water molecules causes the steak to become dehydrated. The end result is freezer burn.
The cold air is taking its natural effect on it, if you lock out the cold air (a really good freezer bag) then you will eliminate this problem. If over a long period of time this happens it just shows that the food has been in there for a long period of time.

Ok, door being will not affect the food (Freezer Burn) nor will the thickness of your container. The problem is inproper storage, what we do in the restaurant is double wrap it in plastic wrap, aluminum foil over that, label and date it and it should be good for up to 6 months
