why is cheese such a staple in mexican food?
cows are not native to the americas
Cows were brought from Europe to the Jamestown colony in 1611 and to the Plymouth colony in 1624
so why is cheese such a staple in mexican food?

The Americas? Mexico is not in America...do your history or rephrase your question.

Because they came to realize that cheese goes great on pretty much anything! :) (it's true)

To the one who said Mexico is not in America: The Americas include North and South America. So Mexico is in the Americas, but not in the USA.

To turn your question around: Why are non native chocolate, tomatoes and potatoes such a staple in Europe?

Because cuisine is not static, when a tasty new food is introduced, people rapidly adopt it into their diet. Over four hundred and fifty years gives plenty of time to make a food culturally yours.

You know what's funny ... is the person who said Mexico is in the "America's" ... Central America, then said "Duh". Ummm ... Mexico is part of North America along with the US and Canada, genius. To answer your question as to why cheese is such an integral part of Mexican food ... cuz we like it.

You're right - cows cheese is not typical of Mexico, but goats cheese is. If you go to Mexico it's quite common to be served a pleasantly sour goats cheese.
