Being a former chef, alot of bakeries use many different flavourings, depending on the type of establishment, alot of the concentrated flavours come from Europe, and anything goes, from nut based to fruit based. Most quality places will use a good brand of vanilla (pure), or others like anise, lemon, orange, rosewater and almond. those can be found in most grocery store, but for really good flavours a specialty goods store that sell quality baking ingredients or bulk food store, even health food stores have very good and organic versions.

chocolat (i think its cocoa or something like that)
