The Venezuelan beaver. As you probably know this animal is mainly raised for it's milk for the production of the rare and famous Venezuelan Beaver Cheese. However, occasionally fine restaurants here in Toronto serve this delicacy.
It tastes a lot like chicken.

Bald eagle. Not in the US.
Mountain Lion cooked and jerked.

I kid you not..hippo. It was many years ago at a restaurant on La Cienega in L.A. and I can't remember the name of it. They featured all kinds of wild game. As I recall, Hippo tasted like swiss steak.

When I worked in the northern part of Canada in a place called Nunavuit, I was a chef there and had the opprotunity to eat Narwal blubber (Sea Unicorn) a type of sea creature, almost like a whale, Musk Ox and a wild bird called ptarmigun.

When I Thailand I had a dish that consisted of a spicy dip made from anchovies, let rot for a year and the mix made into a dip for deep fried frog skins, in Vietnam I had some small BBQ songbirds and some something called water crickets, they were deep fried and season with a spicy salt and pepper mix.

When I worked in the US, I had the fortune to try rattlesnake and alligator.
