1/4 c. oil or bacon drippings
1/2 c. all-purpose flour
1/2 chopped bell pepper
1/2 c. chopped onions
1/2 c. chopped parsley
10 c. ham stock or water
1 tbsp. Worcestershire sauce
4 c. cooked canned red beans
2 tbsp. minced garlic
1 lb. smoked sausage

Heat the oil in a large heavy pot over medium heat, then stir in flour to make a dark gumbo. This will take 45 minutes. To the gumbo add the onions, bell peppers, green onions and parsley. Slowly add 1 cup of stock. Stir in Worcestershire sauce and garlic. Then sausage and wine. Stir in pureed beans, salt and hot sauce. Reduce the heat; simmer for 2 hours

No. I've tried the gumbo with eggs though.

i've heard of black bean gumbo
but i dont know of using red beans,
sounds good though.
