i just lived there a few years (dh was USMC), so i didn't grow up there, but i saw a lot of bbq and seafood and sweet tea. it's southern bbq, though. not the thick bbq sauces like texas and memphis. i was in for a surprise the first time i ordered it. i didn't expect a mouthful of vinegar!
In the east, barbecue is made from the whole hog. Eastern sauce uses no tomato extracts, and no added sugar. It is primarily vinegar, water, salt, black pepper, red pepper, and cayenne pepper.
Western-style, also known as Lexington-style uses only the shoulder of the hog. Western sauce is basically the Eastern sauce with ketchup, perhaps some Worcestershire, and a little brown sugar added.

Well being a north carolinian our pride is in BBQ. Sure they have brisket in Texas and Ribs in Missouri, but North Carolina is home to the true BBQ. Chopped or pulled, is all you need to know. Now don't be fooled by a big chain BBQ place like Stamey's, you want to find a mom and pop type place. I live in Greensboro and there are a few great places near here. The best to my opinion is Prissy Polly's in kernersville. I think the smaller the town, the more common these non franchised restaurants are. The best way to go in my opinoin is just a good ole chopped BBQ sandwich with regular cole slaw, regular slaw is the white kind, and BBQ slaw is the more red, vinegar based. I prefer the regular myself, we take tons of pride in our BBQ here and for good reason, no bells or whistles, just smoked pork, a little vinegar, and cole slaw between two buns and your in hog heaven.

BBQ!!!! In my oppinion, Eastern NC BBQ is the best. Thats what its famous for. Eastern NC uses a vinegar based sauce, and Pork for its BBQ. Grits are pretty typical for the morning. Just make sure you fix them right. I dont know if your from the north or not, but northerners always seem to hate grits and i think its just because they dont know how to fix them. The very basic way is to add salt, pepper, and butter to taste. I also really like cheese in mine. I usually just use American, but really the sky's the limit.
NC is known for their great BBQ, and coleslaw or BBQ slaw. Also, be careful when you order a hamburger "all the way", it comes mustard, chili, slaw and onions. You can get the best food in Troutman at The Lunchbox Cafe!
