.but for Maryland Crabcakes
you add two-three dashes of a good hot sauce..
tear off the crusts of the bread ...
use two bowls..I use Special Crabmeat..it's cheaper and
this method provides pure crab-crabcakes
one bowl for the Crabmeat..picked free of cartilage
and non-meat parts of the Crab
In the other bowl you put all the other ingredients..and mix them with a fork or beater until blended smooth..as a binder..you'll have
no clumps of filler in these cakes
then fold into the meat and form 5 balls per batch..and gently flatten them into a cake
I like them dusted with a good bread crumb and fried in a pan w/ oil...until golden brown ..drain on papertowel..if you prefer broiled just omit the breadcrumbs and carefully broil them..
serve with a tarter sauce made from:
2 tablespoons chop onion
2 tablespoons chop dill pickle
dash of dill pickle juice
3/4 cup Mayo
sprinkle dry dill weed..about 1/2 teaspoon

Crab Cakes:
3 tablespoons butter
1 green onion, finely chopped
2 tablespoons finely chopped red bell pepper
1 garlic clove, minced
3 tablespoons heavy cream
1 tablespoon Dijon mustard
1 egg
1/2 teaspoon minced fresh parsley
Cayenne pepper
1 cup bread crumbs
1/4 cup grated Parmesan
1 pound white or claw crab meat, picked free of any bits of shell
2 tablespoons vegetable oil

Crab, bread crumbs, parsley, garlic, salt, pepper and mayonaise is the glue that holds it together.
I will try to put together a recipe for you because I usually make it by taste. Depending on how much you want to make this will yield about 6 servings:
Crush about 10 butter crackers (Ritz or Town House) into a nice crunchy pile of pieces about the size of a peanut.
Add a half cup of sweet onions finely chopped.
Mix in a three tbsp of Miracle Whip.
Add 2 cups of crab meat.
Add a tbsp of Old Bay Seasonings.
Crush and finely chop 1 clove of garlic or 1 tsp of minced garlic.
Mix in 1 egg after stirring.
Gently mix all the ingredients.
Then roll into balls.
Put under the broiler for about 5 mins long enough to cook the egg. (This will hold it all together) If you have shells for serving you can put these in a pre-heated oven at 375-400 degrees for about 8-10 mins. Sprinkle with Spanish Paprika before serving. (Gives the dish a light, smoky flavor.

You could substitute crab meat for the salmon and make into patties instead of croquettes
Salmon Croquettes.
3 Large peeled potatoes, chopped.
1 Small onion finely chopped.
2 210 g of Pink salmon, drained and flaked.
1 T Chopped fresh parsley.
2 t Grated Lemon Zest.
? C lemon Juice.
1 T Vinegar.
1 Egg, lightly beaten.
? C Plain Flour.
S&P.
2 Eggs lightly beaten.
11/2 C Fresh Bread Crumbs.
Oil
(I)
Cook potatoes in boiling water until just tender.
Drain and mash.
Place in a mixing bowl.
Add, onion, salmon, parsley, lemon zest and juice, vinegar, one whisked egg and pepper.
Stir to combine.
(II)
Divide mixture into 16 portions and form into patties or sausage shape.
(III)
Combine flour and pepper and roll the patties or croquettes to cover. Shake off excess flour and dip in the two beaten eggs, then into the crumbs to coat evenly. Store in the refrigerator for 3 hours.
(IV)
Heat oil in a deep fry pan and lower a few at a time into medium hot oil for about 5 minutes turning over.
Remove and drain on paper towels and keep warm.
At the end of step three they can be refrigerated for up to a couple of days.
