Applesauce. I'm surprised you don't already know that!!!!!

The BEST fat for cookies hands down, is real butter.

I'm not sure about cookies, but for brownies you can substitute apple sauce for oil. They'll be a little denser, but good and better for you.

butter margarine even corn oil but don't know the ratio for converting.

I think applesauce makes cookies and brownies a little sticky and gummy. If the idea is to cut down on the fat, try LOW-FAT SOUR CREAM . Use the same amount as you would shortening. There is no difference at all in the taste or texture.

C'mon guys back to basics. A liquid fat cannot be substituted for a solid fat An 80% fat cannot be substitued for an 100% fat. If butter is chosen as a substitution it needs to be clarified first and then allowed it to re-solidify otherwise there will 20% more water than the recipe called for and 20% less fat.
As long as solid animal fats are being used lard can be a good choice also.
