from my experiences it freezes my sinus cavity.
The explanation I was given years ago was that the cold makes your veins shrink, therefore causing the headache.
One theory is that it is caused by decreased blood flow to the brain.
The esophagus usually lies next to the carotid arteries (main blood carriers to the brain). Very cold food in the esophagus causes constriction of these arteries and pain in the temples.
