What does Avegolemno mean on a menu?!


Question:

What does Avegolemno mean on a menu?

On my daughters wedding menu we are having to start a smoked salmon type salad, followed by Haggis (we are Scottish) and then where it states Avegolemno a Cream of Chicken Soup flavoured with Lemon before the main course. I don't want to sound ignorant and ask the hotel. I know Gespazzo (excuse spelling as I am unsure) is a cold soup and just a bit concerned this is the same? H E L P ! With thanks

Avgolemono = avgo (=egg)+lemoni (=lemon). It is a thick, creamy lemon sauce we make in Greece. Usually we use it on stuffed vegetables, meat, in soups, etc. It is considered difficult to prepare. If you like lemon, you 'll enjoy it! IT IS NOT A SOUP ITSELF(Gazpazzo is a cold italian soup. Nothing to do with it.)

Easy Avgolemono Soup


INGREDIENTS

* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 1/4 cups milk
* 1/2 cup uncooked white rice
* 1 cup water
* 2 fluid ounces lemon juice

DIRECTIONS

1. In a medium sauce pan combine soup and milk. Heat through while whisking.
2. In a small sauce pan boil 1 cup water and uncooked rice. Reduce heat and simmer 20 minutes, or until tender.
3. Add rice to soup and cook until heated through. Add lemon juice in small increments until a subtle lemon taste develops. Serve warm.
