This may be a weird question. But it's my favorite nut! LOL

Love them. Just had a pistachio pound cake from the local bakery this weekend, excellent. I rememeber when some of the ice cream stores and restaurants started making pistachio ice cream with cherries, rather than nots b/c it was cheaper. That was a sad turn of events. Also, nice that there are alot of options other than just the red dyed ones
love em, favorite recipe. Take a pork loin or turkey breast & butterfly it or put a big knife right through the center of the roll. Make a pistachio pesto with garlic, olive oil, pistachio nuts and some basil. Place the pistachio pesto in the center of the roast. I use a pastry bag or the end of a wooden spoon to get the pesto into the cavity. Poke shelled pistachio nuts into small slits cut into the loin. Cook up a soy, honey, garlic & ginger sauce to top the loin with. Good Eating.

I love all types of nuts. I have a great recipe for a pistachio biscotti, let me know if you would like it. I made about 100+ of them last year and gave them as Xmas gifts and I am already getting requests for more.
