Best fruit for duck sauce?

Lookin for anything better than huckleberry. If not then the entree will be called "Duck a la Huck" =)

My second favorite to huckleberry is pineapple, then mole (cacao is botanically a fruit though not culinarily I guess). All 3 together (mostly pineapple, quite a bit of huck and a little cacao) is great too. Course ya need to cook in cloves and red wine or red ale and chili peppers......

Being a former chef, I have used almost anything from cherries and oranges which are a standard, to white peaches, mangos, cloudberries from Sweden, in Singapore we used sour oranges and durian pulp.

I f you using or cooking whole ducks or duck breast, almost anything is fine, I also used kumquats and on the east coast of Canada we used a berry from Newfoundland called Partridge berrys, they are a cross between a cranberry, raspberry and blueberry.

I lke to caramelize the sugars and add a drop of two of wine plus citrus juice to my sauces, before reducing them and adding the demiglaze and the the fruit at the end to flavour, I like to see it as it is the star.

That sounds yummy yummy yummy! Sadly, I'm allergic to pineapple, so I couldn't try that, but otherwise, I would go with papaya, chili peppers, bell peppers, orange, and some cocoa for a somewhat "smoky" taste!

That works well with Fried Tofu, too!

plum or orange. there is a recipe for "duck a l'orange" on www.foodnetwork.com. i don't eat duck but i'm sure it will be good. (it's good on chicken too).
