What is the difference between 18/18 and 18/10 stainless steel?!

What is the difference between 18/18 and 18/10 stainless steel?

Hi,

Just want to know what that means and which one is better. I am wanting to buy some stainless steel pans soon and want to know what I am looking for!

Nonmouse is absolutely correct in his explanation of the 18/10 ratio.

When buying stainless steel cookware, most are 18/10. Just look for the heaviest pans you can afford. The heavier the pans, the better and more evenly they will cook. Try looking at Calphalon Tri Ply or Henckel's Stainless, both of which have heat conduction throughout the entire pan, and both are 18/10. In a slightly lower price range, Emeril Stainless has heat conduction in bottom of pans only, but is still a very sturdy set.

18/8 is 18% Chromium, 8% Nickel, while 18/10 is 18% Cr and 10% Ni. 18/10 is somewhat more corrosion resistant (but only slightly). Either one should last for many years. Just stay away from 18/0 stainless or stainless with no numbers after it- it won't have any nickel in it, and won't last as long or look as nice.
