Oxtail - Philipino style?

I love oxtail. I had only had it italian style until a couple weeks ago.
I was taken to a local Philipino restaurant where I ordered Kari-Kari, oxtail (and tripe, but I skipped the tripe). It was amazing! It was in a peanut like sauce, with eggplant and some other veggies.
If you have a recipe, or know of a website that may have the recipe I would appreciate it.

Yes, Kare-kare is the best. ?

it's best with bagoong. yummy yummy fish paste!

Annato is a vegetable colouring from a plant used in Asian/Filipino and Hispanic cooking, the seeds/powder can be purchased and added to a small amount of vegetable oil, then used or just add the seeds/powder to the oil your cooking the oxtails in when browning.
