I Have Always Wanted To Know This

If they weren't, they wouldn't be sausages.

I think so they can fit nicely in a bun

Because when you grind up all those different kind of meats and spices it becomes a big blob . At some point someone decided to use the left over intestines of whatever animal they were butchering. They take the intestines and stuff it with the newly ground up meat and spices and stuff. Whenever you see something called "natural casings" on sausage or hot dogs, those are intestines - hence the shape.

what shape do you want them to be??

Buy a cook book and check the recipe to make them.
The meat is extruded into a thin tube called casings, knotted and twisted at the desired length..
