Answers:
Pizza evolved gradually. Flat breads date back to the ancients in many regions of the world, including what is now Italy. Tomatoes were added to flat breads by Italians in the 1700's. In the late 1800's cheese was added. Many place the date as 1889 when the modern cheese and tomato pizza made its debut in Italy, though some believe it existed before that date.
Many of the early pizza-like flat breads eaten in ancient Rome were made with other flours besides wheat. Chestnut and Chickpea flour were often used.

Eating flatbread with vegetables or meat baked on top of it has been going on for thousands of years. The Greeks did it and so did the Romans. The first recorded use of the word 'pizza' always seems to be attributed to a chef in Naples who made a pie of tomatoes, cheese, and basil (the colors of the Italian flag) for Queen Margarita. He called it "Pizza Margarita". That is the story I always hear.
