Why red and white meat? what sets them apart?


Answers:
Darker meat comes from usage of the muscle group and diet. If you take a domestic duck breast and compare it to a wild duck breast you will see a drastic difference in color. Wild ducks fly often and use their breast muscles to achieve this, resulting in myoglobin which assists in supplying oxygen to the muscle group through elevated iron. Same goes for veal (I'm sorry if I offend anyone,) because the animal doesn't walk much if at all, the muscle groups don't require extra oxygen therefore myoglobin is less, resulting in a very light to pink colored flesh. It's much more complicated than my definition, but hope I could help.

Red meat is beef made from cows and white meat is usually chicken or pork. Red meat usually has higher fat content or cholestoral i beleive.
