Instructions on how to use a smoker?

My wife bought me a Smoker Grill..but since we live in Europe instructions are in German. Anyone know a good site on how to smoke/grill meats and fish?


Answers:
I do beef brisket and sausage quite often. DO NOT USE LIGHTER FLUID!!!! Get one of those charcoal starters that uses newspaper. It will take 15-20 minutes to get good hot coals by this method buy you do not want to be smoking your food with petroleum by-products. Get hickory or mesquite wood "chunks" not "chips" and soak 3 or 4 chunks in water for 15 minutes. Put charcoal in smoker, wet chunks right on top of charcoal, meat on rack, and then lid.

DO NOT always lift the lid to see how it is going, each time you lose 15 minutes of heat. I smoke 5-6 pound brisket for 5-6 hours. However, the meat will only absorb the smoke flavor for about the first 2 hours. So, you can remove the meat after that time, brush with BBQ sauce, and tightly wrap in foil. Place in over at about 225F for the remaining 3 hours.
