Sure! Just put them in a ziplock and make sure to squeeze all the air out as you're sealing it. I do this with bread crumbs all the time and they're fine. I don't see why graham crumbs would be any different.

I grind mine in the food processor and store them in a glass canister. I don't find it necessary to freeze them. They don't really spoil, they only go stale when exposed to air.

yep you can freeze them if you'd like but make sure there isn't any moisture, so i might suggest a zip lock bag. You don't have to freeze them though, they won't go rotten or start to mold.
