a papaya will start to turn yellow/orange and give a soft dimple impression when squeezed. You will be able to smell it ripening. Shake it, the seeds will bounce around. Also, the gnats will soon follow.

well, it depends what kind, the small yellow ones need to have the skin just barely wrinkled, the red green ones need to be just, just soft when you press with your finger, if thery are soft they are too ripe.

Papaya rich colour, gives slightly at room temperature.Best if picked after maturity. Judge maturity by aroma.
