Make your own trail mix.Go to a bulk foods place grab an assortment of dried fruits and yogurt covered raisins nuts make up a large batch and when you want something different throw some chocolate chips or macadamia nuts in it granola is great also

Banana Nutmeg Mini-Muffins Recipe

Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon ground allspice
1 egg
1/2 cup buttermilk
1/2 cup mashed bananas, very ripe
1/3 cup oil


Instructions
Preheat oven to 400 degrees F. Coat miniature muffin cups with nonstick cooking spray or line with paper baking cups. In a large bowl, combine the flours, sugar, baking powder, baking soda, nutmeg, salt and allspice; mix well.

Beat the egg in a small bowl. Add the buttermilk, banana and oil; mix well. Add to the dry ingredients; stir just until the dry ingredients are moistened.

Divide the batter evenly among the muffin cups, filling each 2/3 full. Bake for 10 to 15 minutes, or until light golden brown and a toothpick inserted in the center comes out clean. Immediately remove from the pan. Serve warm.

Pumpkin Oatmeal Muffins

INGREDIENTS:
1 1/2 cups all-purpose flour
1 cup quick oats
3/4 cup firmly packed brown sugar
1/2 cup raisins (optional)
1 tbsp baking powder
1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1 cup canned pumpkin
3/4 cup fat-free milk
1/3 cup canola oil
1 egg lightly beaten, or 2 egg whites

PREPARATION:
Preheat oven to 400 degrees and line a 12-cup muffin tin with paper cases. Combine dry ingredients in a large bowl. In a medium bowl, combine the pumpkin, milk, oil and egg(s), blending well. Stir pumpkin mixture into dry ingredients until the dry ingredients are just moist. Fill muffin cases evenly and bake for 22-25 minutes.
