Question:

Serrano chiles are my favorite but why the variation in heat??

I just made myself 4 chicken tacos and accompanied them with my all time favorite chile pepper, the mighty serrano. However, I was eating a fresh one (seeds and all and got no heat). I thought my taste buds were numb, but I had a second one and it nearly burnt my mouth off! It was like eating molten lava! Why the extreme variation in hottness in the serrano? It is very inconsistent.


Answers:
Been there, done that! Some are hot & some aren't. Trouble is, you don't know till you bite into them.
