Ice cream is "Frozen dessert containing cream and sugar and flavouring";
Sherbert is "Frozen dessert made primarily of fruit juice and sugar, but also containing milk or egg-white or gelatin;
Sorbet is "Frozen dessert containing no milk but having a mushy consistency; usually made from fruit juice

Ice cream is made with milk, sugar, fruit (in some) cream and what not.
Sorbet is made with water, fruit, water ice sugar and so forth

ice cream has more milk. sherbert/sorbet is more icy fruit puree.

However, in England, sherbet is a fizzy sugar powder made from sugar, an acid (usually citric), and flavouring.
