How come when u put reg. water and sugur in the fridge its doesnt do that..

Ah...gelatin. That's a derivative from animal bones and hides(usually cow or pig). That's why vegetarians won't eat Jello. Gelatin is a naturally-occurring protein (a hydrolyzed collagen) that's also a long-chain, cross-linked polymer. That means that the individual amino acids that make up the protein are not only linked together in a chain but that the chains link to other chains, especially at cool temperatures. This structure traps water which gives Jello its spongy, wiggly texture. You make gelatin at home without Jello when you boil chicken bones to make chicken broth. If you cool the broth, it will set up like Jello. It gives warm broth the its rich texture. You can also buy unflavored gelatin at the grocery (Knox is the main brand) without sugar or flavorings. It's used in recipes and will set up just like Jello (but won't taste like anything). Gelatin is used in many things, from photographic film to cosmetics to drug capsules.
