There are a variety of healthy things that are of a consistency that doesn't really require chewing.
For things with a "sweet" taste, try apple sauce, yogurt, low-fat pudding, Italian ice (which doesn't provide much nutritionally, but isn't bad for you, either), frozen fruit sorbet, and sweet soups, such as berry soup. Jams and jellies also do not require much in the way of chewing, but I'm not sure you'd want to eat them on their own.
For things of a salty nature, the best way to go would be- you guessed it- soups. But you'll want soups that are thick and creamy, not soups that have chunks of foods. Some delicious thick, creamy soups that won't require chewing are: creamy broccoli and cheese, creamy tomato, creamy potato, cream of chicken, cream of mushroom. Some nontraditional creamy soup ideas: butternut squash, tomato avocado, black bean, pumpkin. For a change of pace from soup, you can also try mashed potatoes, pureed veggies, and pates. I also believe that hard boiled or poached eggs could be formed into something requiring no chewing.
Also keep in mind healthy beverages- Fruit smoothies, fruit juice, and veggie juice are good for you. You can pack a whole lot of fruit and/or veggies into a smoothie!
But once in a while, nourish your soul, or your inner self (whatever you wish to call it)- treat yourself to something. Thick, cold, creamy milkshakes, some ice cream, chocolate mousse.
