I love cheese too. I love cheese pizza, especially when it's golden brown on top and I also love grilled cheese sandwiches.

The best thing I do with cheese is get a spicy jalapeno cheddar cheese and melt it over a slice of roast beef....my god that is the best tasting treat ever!

I may not have as many as chefgrille, I loved the comment about "Behold the power of cheese!, but I have more than you'd usually find. It always hits the spot when you don't know what to have.
I do, especially Mexican and Italian cheeses.
Bring it on ! My favourites are any kinds of smoked cheese, especially smoked Gruyere (Austria) and smoked Jarlsberg (Norway). Also, Gouda with caraway seeds is to die for, and makes a super grilled cheese sandwich!
I love cheese and especially grated cheese on garlic mayonnaise with chips.
