Simple syrup?

I can make a simple syrup of two cups sugar and one cup water, simmer, blah blah blah. but can you replace some or all of the sugar with honey and have the same effect?
I use the simple syrup for mixed drinks as well as to sweeten tea. I like the taste of an iced tea sweetened with honey but it does not dissolve well in cold tea.

Just make the simple syrup using a 1:1 ratio. You don't need 2 cups sugar to one cup water, and yes you can use honey and I think you can also use Splenda, but I've never tried it.

I think you should try a smaller batch - maybe make it half cup honey and half cup water. Do a 1:1 ratio to start and adjust from there. It will not take as long to disolve so keep careful watch on it.

Also remember that you should not give honey to anyone under three years old. Honey CAN carry botulisum spores that their little systems may not be able to handle. As long as you cook the honey hot enough to kill the spores, little guys can have it.
