Why do deli's preshave their meats?
I know it comes down to time and money, but isn't the idea of a deli for fresh meats?

It is done strictly to save time for the deli workers and to make the customer think you got a whole lot of meat for the same amount of money. When I go to the deli counter and they start to reach for the pre-shaved stuff, I say "I don't want that, I will take it fresh cut" and if they say it was freshly cut, I just point out that I didn't see them cut it, so I wouldn't know how fresh. You are the customer.
My idea of a deli is that you can go inside and get interesting food stuffs, which you can take home and eat without any extra preparation, or take to the park bench and eat like a picnic.
I think of the deli as the original fast food place, like before McDonald's there was the deli.
There are salamis and cheeses, breads, olives, pickles --- slices and bits of dozens of good things to eat. Not to mention, bottles of wine or water and baskets to carry the food.
Salamis used to hang from the ceiling and the customer would buy a small salami, some cheese and a loaf of bread. These items were not sliced beforehand because there was limited means for refrigeration.
Now there are prepared sandwich fillings, such as egg salad, and sliced ham, but these things need to be kept at below 40 degrees F. to remain good to eat.
As long as the deli operator has someone watching the temperature of sliced meats and prepared fillings, and as long as those products have been prepared within 6 hours of the time they are purchased, they are considered fresh.
Most "real" deli's slice the cold cuts when u order. I actually prefer those to the Subways of the world. Think about it, one person may like their slices cut thicker or thinner than I do and should be able to order that way.
The "pre-fab" cuts are typically for pre-measurement. This keeps shortage down; people won't be giving their buds extra meat. These stores claim they're fresh cut meats, but do we really know HOW fresh?
This is to save time and money and sometimes a person wants to simply go in, buy something and leave. Waiting at the deli counter can take time and some people don't have any to spare.
It's a bit of a tradeoff. You don't know when it was sliced, but you could get it fast.
