Dinner tonight?

I can't decide what I should have for dinner tonight. I have chicken breasts, ground meat, stew meat, sausage, tomatoes, onions, peppers, cheese, tortillas, brown rice, veggies, eggs, mangos, strawberries, cilantro, potatoes, tortilla chips, avocadoes, etc....alot to choose from, but I can't decide...any suggestions and recipes?

You got some great fixings for "Nachos"
I would use the Chicken Breast for the meat...don't forget the sour cream :)

make tacos. yumm. now i'm hungry.
cook the meat with peppers and onions.
put cilantro, tomatoes, leattuce, cheese and avocado in the tacos.

You should make chicken fahitas or soft tacos.

You can fry up the chicken or beef with the onions and peppers. Shred some cheese and dice the tomato for a topping, and use the tortillas! Sounds good!

Sweet and sour chicken

This recipe assumes that you are using one chicken

Ingredients
- 1 medium onion
- Salt, sugar, pepper, garlic, ginger
- Yogurt
- Vinegar
- Bell peper
- Tomatoes
- Lemon juice
- Soy sauce



1. Marinade chicken (small pieces) in vinegar, salt, yogurt and half a teaspoon of red chili powder
2. Take 1 medium onion, dice it up
3. Add the garlic and ginger
4. Heat it up in a skillet for about 2 minutes in olive oil
5. Add chicken
6. Cook for about 10 minutes
7. Add tomatoes, lemon juice (1/4 of a cup) and 2 tablespoon of sugar
8. Add a little less than half a cup of soy sauce
9. If it is too dry add a little bit of boiling hot water.
10. Cook till done (20 more minutes )
11. Dice the bell pepper and decorate
12. ENJOY

SIDE DISH

Spiced Potato (I am assuming that you are using about 8 potatoes)

1. Take 1 large onion and chop it up (about 2 cm per piece)
2. Heat up a skillet/any type of pot you like and add the onions in some cooking oil
3. Cook for about 5 mints
4. Add pepper, and a can of salsa
5. Add about a cup of yogurt and a cup of boiling water
6. Cook for about 15 mints
7. Check if the potatoes are done
8. As soon as the potatoes are done add some chopped ginger, 1 chopped bell pepper, 2 large tomatoes and fresh cilantro. Cover the pot for about 10 mints to steam the pepper and tomatoes
9. ENJOY

Satay Chicken with Peanut sauce

Chicken pieces marinated in Soy sauce and spices, serve with crunchy Peanut dip
Ingredients:

* 8 Chicken drumsticks/ large chicken wings

Marinade

* 1 tbsp Soy sauce
* 1 tbsp Honey
* 1 tsp Turmeric
* 1-2 tsp Cumin
* 1-2 tsp ground Coriander
* 1 Garlic clove, crushed
* 1cm piece of fresh Ginger, peeled and finely grated
* 1 tbsp Lemon juice
* 1 tbsp Olive oil

Peanut sauce

* 5 tbsp crunchy Peanut butter
* 1 tsp Thai red Curry paste
* 120ml Coconut milk
* 2 tsp Brown Sugar
* 1 tbsp Lemon juice
* A handful of fresh Coriander, chopped

Method:

* Pierce the chicken pieces several times each with a knife and place in a non-metallic bowl.
* Mix all the marinade ingredients together and stir into the chicken. Leave to marinate over night or at least for 3 hours, turning them occasionally.
* Preheat the oven to 200 C/ Gas mark 6.
* To make the sauce, place all the ingredients, except the coriander, in a small pan and bring to a simmer. Cook for a couple of minutes, stirring occasionally, until thickened. Transfer to a dipping bowl, and leave to cool to room temperature. Stir in the coriander just before serving.
* Transfer the chicken pieces into a roasting tray with the marinade. Place in the oven for about 30 minutes, turning occasionally until golden and thoroughly cooked through (juices should run clear) if the juices run clear. If still not cooked leave for another 10 minutes.
* Serve with peanut sauce.

You can make some Beef Tips w/ the stew meat and serve it over rice or egg noodles.
Go to Foodnetwork.com and search "Beef Tips" and there are some simple recipes for it.
Wish I would have known this yesterday, I am trying a new recipe for beef tips using stew meat, put it in the crock pot this morning, can't wait to get home and try them.

I would brown the ground beef, and throw in the peppers, tomatoes, cilantro and onions, thel layer tortillas and meat mixture into an 8 X 8 casserole dish, top with the cheese and bake in the oven at 350 for about 20 minutes. You could also add the rice to the meat mixture layers as well. Save some of the tomatoes, peppers, onions and cilantro and mash together with your avocadoes for a guaca mole dip with your tortilla chips, too. Enjoy and good luck deciding on dinner!

This is always a big hit with people at my house. Sprinkle garlic salt on both sides of the chicken, then place it in a baking dish (oven preheated to 350). Dice some tomatoes, onion, peppers (enough to make two cups). Then chop 2-3Tbsp. of cilantro and mix into the tomato mixture. Spoon over chicken. Top with grated mozzarella cheese and bake 40 minutes or so. You could also top with avocado slices as well.

Then make some brown rice using chicken broth instead of water and some more cilantro.
