The rind of a citrus fruit is the skin, including the zest and the pith. The zest is the very thin outside colored layer with all of the essential oils, which is very good in recipes.

The pith is the bitter, white spongy part that protects the fruit inside.

that thin layer of yellow "skin" on the very outside of that which makes the yellow gummy bear......a lemon!!
