Soy for buttermilk?!

Soy for buttermilk?

I found this great recipe for blue corn muffins but it calls for buttermilk in the ingredience but I follow a strict milk-free diet. Can anyone tell me how to amend soymilk so I can substitute it for buttermilk? Thanks!


Answers: Vegan Substitute: Clabbered soymilk (to clabber mix 2 tsps. lemon juice or white vinegar per cup of soymilk)
