I only liked cooked vegetables. I dont eat them that much...
Answers: WILL ANSWER 4 FOOD! i love veggies. i like most of them. im more into raw veggies though. there is only a few veggies that I really like
and I like to blanch them quickly in water and them stir fry them very quick in butter or olive oil & garlic
broccoli * carrots * corn * zuchinni * yellow squash
I also like a lot pumpkin, onion, plantains & snow pies I love some veggies,, Brocollii, Cauliflower, Corn, Collard Greens just to name a few duh, of course I do! If they're prepared properly. No broccoli, onion, peppers, or okra. I love some vegetables and don't like others. I think that you just have to try out many to find which ones you like. My favorites are artichokes (absolutely delicious!), zucchini, broccoli, green beans, lima beans, spinach, beet greens, and corn. I like some salads too, especially with lettuce, baby corn, cucumbers, tomatoes, and cesar dressing. I can't stand eggplant, butternut squash, brussels sprouts, carrots cooked or raw, or cooked cabbage. Cooked I just picked peas out of my garden the other day and steamed them, they are so good.
The best next thing to fresh is frozen with any vegetables.
Fresh green beans are so good when cooked.
My daughter who is 19 loves to make green bean casserole, the recipe is on a french fried onion can or campbellsfoods.com. It is best with french style green beans.
Fresh corn on the cob is great when cooked.
The ones that are good eaten fresh and dipped in ranch dressing are:
broccoli
carrots
cauliflower
radishes
Or you can put them in a salad with lettuce.
I haven't had lettuce from the store for a few weeks, it is so expensive and my inlaws have been giving me leaf lettuce from their garden. It is so good. Yep, and many type of vegetables too. If you like them cooked then cook them. They are really good for you and tasty too.
BTW I'm an omnivore and eat a lot of stir-fries, that way I cut down on the amount of meat I eat. I also can use the cheaper cuts of meat that way too. I like my vegetables warm and crisp, not cooked into a mush. Now I do. When I was a baby I didn't and I was fatty and not in good health as I am now. In Italy we have lots of smashing veggies...what a taste of nature! I dont like em very much.
But i do have them sometimes. . . Yup, pretty much all of them. Except eggplant, I can't get behind that. I love them. I like them cooked and uncooked. Before, I hardly ate any vegetables.
Then I discovered gardening and the HUGE variety of garden vegetables that are available to grow. You'd be amazed. There are literally hundreds of varieties of everything. So, one kind of radish will taste -- bla -- especially those gross ones you find at the regular supermarket (which are also not fresh). Then you find that there are varieties of radish that taste so fantastic that you cannot believe it -- you can eat it plain without anything.
This goes for everything, from carrots, to broccoli, to strange tasty things you never knew existed. The stuff you find at the store is only the cheapest lowest quality easiest go grow stuff -- even the organic stuff. So, if for example, if you hate carrots -- you've likely only tried one kind of carrot when there are hundreds to try that are all different shapes, colours, sizes, flavours...
I encourage everyone to order seed catalogues and start gardeing -- even apartment balcony gardeing is easily done. I love vegetables, lol all my friend think im weird (well thats for a number of reasons ^_^), but i love bell peppers, okra, spinach (especially when raw), kale, collard greens, asparagus, eggplant, zucchini, carrots, cucumbers, sweet potatoes, cauliflower (my dad makes this so well) , string beans (my mom makes this so well), peas etc. Yes. While I was raised on meat, we also had a wide variety of veggies as well. I was one of those kids who took to them from the start. I didn't start to tolerate lima beans (still only mixed with other veggies), zucchini, squash and spinach (I have become accustomed to the taste because I stared to eat it in my pregnancy for all fo the good stuff that's in there) until I was an adult. For the longest time, I could only have zucchini and squash if it's mixed with someting, but now. I like them by themselves.
One of my comfort foods is boiled potatoes with SmartBalance. We often had potatoes with dinner (cheap aned healthy) with margarine. Now, I refuse to eat margarine, but use Smart Balance spread which is all natural oils.
I buy frozen veggies as they're probably cheaper or as cheap as "fresh" (we get them at Kroger for $1 for a 16 oz. bag; Sometimes, some "fresh" veggies will go on sale for $.99 a pound) and they taste better than both canned (which are usually loaded with sodium and other preservatives) and "fresh". I steam them as more nutrients are retained and they still (generally, unless I leave them on too long) retain some crispness.
If you do some searching, you'll likely find some good veggie recipes that don't alter the nutrients too much, especially if you do searches for vegetarian or vegan cooking or vegetarian or vegan recipes. One site that comes to mind is VegWeb. I have more, but unfortunatley, I don't have time. Or, you could just pose another question here for recipes that are mostly veggies.
