What are extremely cheap, basic vegetarian meals?!


Question:

What are extremely cheap, basic vegetarian meals?

I decided to fix my car AC this week because I live in Florida and I can't take it anymore! But this will leave me hurting financially.

I need meal ideas. I already have PB&J, rice and beans, pasta//sauce/beans, and salad. (In case you are worried, I am also supplementing with other kinds of fruits and vegetables--I'm not completely unhealthy.) I don't want anything complicated because I'm used to takeout. I'm thinking more in terms of staples that require little to no preparation. Any ideas?

I actually do eat seafood, but I'm a little picky about what I do and don't eat in that group so I didn't mention it in the initial question...but that said, if you have seafood ideas, you can mention them. I'm just somewhat squeamish about it.

(Please don't beat me up because I do call myself a pescetarian rather than a vegetarian!) Something I survived on for 6 weeks straight, and will start eating again next week:

'Chili':

1 pack boca burgers (you only use half the pack)
total of 28-32oz of your favorite tomato sauce/spaghetti sauce
1 can of light red kidney beans
1 1lb bag brown rice

All of it where I shop may cost me $5-$6...and the mixture lasts me 4-5 days, eating two bowls a day. It tastes great cold or warm, and a little parmesean cheese on top is really great. =) tuna?? do u eat seafood? you can get alot of tuna and make like sandwiches If it's possible, I would start growing a garden with a variety of veggies and fruits. From there the possibilities are endless. Stir Fry is something you can't mess up and it takes minutes to make and if you grow your own veggies, you can do it for practically nothing! Try Palak's indian meals. They're already to go, just boil the bag it comes in for a few minutes and there you have it. Thai kitchen also makes all sorts of quick soups and curries that don't lack in flavor. I usually hate packaged foods, but these seem to break the mold if you know what I mean....... Try an Vegetarian Chili (A couple of variety of drained caned bean, a drained can of corn and a can of stewed tomato's and what ever spice you can take.) or Nachos (Chips, Cheese, some refried beans Layer chips first bake 350 for a few mins.). A fruit salad. Canned Vegi soups. Caned foods are cheep, but soggy You have to ad stuff to them to make them taste better. Search vegweb.com with the ingredient you have on hand then add items to the list that repeat like spices and tofu (usually under $1) Tofu can be silken for cream and egg substitute or firm for cooking and it has a long shelf life and is super versatile (it can even be a quick healthy dessert). If you have a bread machine now is the time to use it - you can make terrific nut and sprouted wheat breads at a fraction of the retail price just store them in the fridge since they have no preservatives they will spoil on the counter. Falafel mix is a great and simple treat for veggie burgers and veggie loaf. Good Luck and have fun with the recipes you just might get in the habit of saving money and cooking your own stuff! Lentils. Ramen noodles, or macaroni and cheese seem like some basics you haven't mentioned. Also, I don't know if you eat eggs, but you could make a nice veggie omelette with them. Poor person's staples: oats, pinto beans, onions, potatoes, fruits and veggies in season. Stores usually have a basket in the back with dented cans of food sold at a discount. Even the dumpster out back of stores and restaurants could have some perfectly good stuff if you can get it before it gets too hot outside. Veggie stir fry and rice or noodles. Just throw in some vegetables (tofu if you want) and cook it with sauce in a skillet/wok. rice and beans are cheap and have what you need.as far as the car ,A/C depletes the ozone .if you can`t take the heat then move to a cooler climate. I just want to point out that being a "pescetarian" is fine..but it's not any type of vegetarian whatsoever...they arent related despite what "some" people publish on the web.
