What combination veggie dish is flavorful enough to eat with a little fish?

Husband and I are trying to omit flours and sugars for a couple weeks. But I need a great combination that is very filling and flavorful.

I'm asking here because I figured vegetarians may have to get creative with their spices. Just forget the fish part. Fish is not vegetarian. You may want to ask this in the general food and drink section. FOIL WRAPPED FISH AND JULIENNE
VEGETABLES

1 lb. unbreaded fish fillets, thawed if frozen
2 c. assorted vegetables, cut into strips (zucchini, carrots, green and red peppers)
2 tbsp. butter
1 tsp. lemon juice
1/2 tsp. seasoned salt
1/2 tsp. marjoram
1/4 tsp. garlic powder

Place 1/2 pound fish fillets on heavy duty foil. Arrange 1 cup vegetables around fish. Top fish and vegetables with 1 tablespoon butter, 1/2 teaspoon lemon juice, 1/4 teaspoon each seasoned salt and marjoram and 1/8 teaspoon garlic powder.
Seal foil securely. Repeat process with remaining ingredients. Bake at 375 degrees or grill 4 inches from heat source 25 minutes or until fish flakes easily with a fork. Makes 2 servings.

Try this it is very yummy!!!!!!!!!!!!!!!! I actually just made an awesome vegetable dish for dinner, I'll share it with you.

Baby carrots (as many as you like)
1 head cauliflower
1 stalk broccoli
Approx 1 cup shelled edamame (soybeans)
1/2 cup or so pine nuts
5 or 6 cloves garlic (more or less to taste)
Enough olive oil to nicely coat the bottom of a large skillet
Salt and pepper to taste
Liquid aminos or soy sauce to taste (I only used a splash because I didn't want to saturate the mixture..I like to taste my veggies!)

Coat the pan with olive oil, and add garlic and seasonings. Add carrots and edamame, saute until mostly tender. Add cauliflower, broccoli, and pine nuts and stir fry until they're cooked how you like.
This is an awesome dish and the great thing about it is that I just used what I had in the fridge. You could pretty much use any veggies for this and it would turn out great. If you like your food a little spicy, you can add some hot peppers- I added a dash of cayenne pepper to mine. Hope you like it.
