Answers: Knarfwiz suggestion sound yummy, and I will definitely try it. I love 'shrooms. My contribution is start with a ripe avocado, peeled, cut, and then mashed. Salt and pepper. Add Miracle Whip salad dressing [not mayo!] to taste, mix in finely chopped onion, a little chopped celery, black olives, Creole seasoning if you have some, [any thing to add some ZIP if you don't] crumbled cheese,[bleu or feta.] Great on a toasted English muffin, but my fave is Brownberry Oatnut bread, toasted. A few slices of tomato and you are there. I usually sprinkle crumbled, crispy bacon on it, but it is still good without. Cooking for my clan, and never letting them see me sweat, which means you only think you are out of a vital ingredient, there is a way around it if you look. Might explain why I am a good cook, but leave most baking to others. subway eat fresh. My favorite:
2 slices whole grain bread
thick slice of tomato
mixed field greens
slice of provolone or other favorite cheese (can substitute a slice of tofu if vegan)
thick layer of sprouts
liberal sprinkling of Spike seasoning blend
thin layer of light mayo i'm not a vegetarian but when i get people at the restaurant asking for "something different" i cook them a portabella burger...trim the stem and clean the fins off a nice size portabella mushroom and marinate in italian dressing...if you can cook it on the grill all the better but pan frying or broiling works also...cook just til tender serve on a burger bun with all the fixins and enjoy Here are some no-meat options for hearty sandwiches:

The veggie deluxe- Thick bread of choice, mushrooms, onions, red peppers, banana peppers, lettuce, tomato, cheese of choice, spicy, honey, or Dijon style mustard.

The classic grilled cheese- Bread of choice, buttered and toasted, with cheese of choice. Place cheese between toast slices and microwave until melted. Goes great with tomato soup, in case you weren't aware!

Cheese and tomato- Bread of choice, lettuce, tomato, and layers of your favorite cheeses. Top with some of your favorite sandwich spread, if you would like.

Hot peppers and onions- Saute some red peppers, green peppers, and onions. Add in some brown sugar or honey barbecue sauce, and simmer for a few minutes, until thickened. Serve over toasted onion buns.

Italian style- sliced provolone cheese, tomatoes, lettuce, olives, layered on your favorite toasted bread, sprinkled with fresh minced basil, salt, pepper, and a drizzle of olive oil.

Don't forget to take advantage of the soy products available, as well as other products made as imitation meat, such as artificial sandwich cold cuts (check the health food section of your market), and frozen veggie burger patties (in your health food section, or normal frozen foods- they offer a lot of varieties in these now, ranging from original veggie burger, to pizza flavored, and they even have fake chicken style burgers). These can be used to make an awesome cold cut style sandwich or a good, hearty burger!

cheese
lettice
peppers chopped into slices
carrots chopped into slices
sliced tomatos

and basically anything else you have! It tastes good, is healthy and quick to make!
