Light and Fluffy Spinach Quiche:
INGREDIENTS
1/2 cup light mayonnaise
1/2 cup milk
4 eggs, lightly beaten
8 ounces shredded reduced-fat Cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/4 cup chopped onion
1 (9 inch) unbaked pie shell
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with foil.
In a large bowl, whisk together mayonnaise and milk until smooth. Whisk in eggs. Layer spinach, cheese, and onion in pie shell, making several layers of each. Pour in egg mixture. Place quiche on prepared cookie sheet. Cover quiche with foil.
Bake in preheated oven for 45 minutes. Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filling is set.

German Potato Pancakes:
INGREDIENTS
2 eggs
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
6 medium potatoes, peeled and shredded
1/2 cup finely chopped onion
1/4 cup vegetable oil
DIRECTIONS
In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.
Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about 3 minutes on each side, until browned and crisp. Drain on paper towels.

Hot Baked Fruit:
INGREDIENTS
8 ounces pitted prunes
8 ounces dried apricots
1/3 cup raisins
1 (15 ounce) can pineapple chunks, undrained
1 (16 ounce) can cherry pie filling
1/4 cup dry sherry
1 cup water
1/3 cup blanched slivered almonds
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a deep baking dish, mix together prunes, dried apricots, raisins, and pineapple chunks. In a separate bowl, combine cherry pie filling, sherry, and water. Pour over the fruit, and blend thoroughly. Stir in almonds.
Cover, and bake in preheated oven for 1 1/2 hours.

ENJOY! Look at my question I just ask.....lol. but have a pancake..works for me untill I get sick of them. Anything that doesn't contain animal products. Good riddle. Alot will depend on what you have on hand. fried potatoes, yogurt with fruit, how strict of a vegetarian are you? Scrambled eggs and bacon!


Or would that be bad? Why not just have an apple or something? A bowl of oatmeal, toast and some fresh or even canned fruit sounds good to me. Now I'm hungry! I use eggs from contented free range chickens our neighbors.

Take one egg, one cup soy milk, one cup flour, one tablespoon oil. one teaspoon baking power and make waffles. Use pam to spray the waffle iron. Pile with fresh strawberries and cool whip or other non dairy.
If weight is not a problem use margarine and syrup.
You can even use whole wheat flour.
We have a big breakfast of that and morning star farms veggie weinners on the side or I love the veggie sausage patties. All meat free.
In fact it makes agood dinner. bon-ap-ateet make yourself some pancakes or some cereal with fresh fruit or berries and soy milk. Make some Scottish oatmeal or perhaps just some fresh juice. french toast?
1/2 cup soy milk
3tbsp unbleached flour
1/4 tsp cinnamon
1tsp vanilla extract
4 slices whole wheat bread
maple syrup
*whisk together the soy milk flour cinnamon and vanilla
*dip bread in the batter coating it on both sides
*cook to a golden brown in a nonstick skillet
*serve w/ maple syrup or fruit

and if your not into cooking just find a common biscuit recipe and use vegan margarine and soy milk instead of milk and butter, good luck =) Eat some fruit
