I haven't heard of a tofu marshmallow, but you can make one just as good as Jet-Puff's (and cruelty-free) using vegan or vegetable gelatin packets.
A really good recipe is in the cookbook La Dolce Vegan, or you can probably find a recipe online.
If worst comes to worst, you can always buy pre-made vegan marshmallows at most online vegan stores.
