Question:

Why did no one answer my last question?

I asked if anyone had any recipes for tofu and cous cous in a dish together. Preferably middle eastern thanks.


Answers:

Hot Savory Baked Tofu

2 blocks of Tofu (coagulated with ngari) (cut into cubes)
2 cups Whole wheat couscous
2 tbsp olive oil
3 tbsp tamari
1 onion med (coarsely chopped)
1 garlic sm to med (chopped or chunks)
In a bowl or baking dish prepare all ingredients.

Preheat oven to 375 degrees

Let couscous stand in water for 10 minutes.
Mix ingredients so that all ingredients are evenly distributed. Bake Tofu, olive oil, tamari, onion, and garlic for 1 hr and half at 375 degrees.

After baking add:
1 tomato (chopped) or a handful of cherry tomatoes (chopped / halved)
Sprinkle of cilantro.


Mediterranean Couscous with Tofu

1 5.7-ounce package curry-flavored or roasted garlic and olive oil-flavored couscous mix
1/2 of a 12- to 16-ounce package extra-firm tofu (fresh bean curd), well drained
1 tablespoon olive oil
1/2 cup sliced pitted ripe olives or sliced pitted Greek black olives
1/2 cup crumbled feta cheese or finely shredded Parmesan cheese (2 ounces)

Directions
1. Prepare couscous according to package directions, except omit oil. Meanwhile, cut tofu into 1/2-inch cubes. Pat tofu dry with paper towels.

2. In a large skillet heat oil over medium-high heat. Add tofu; stir-fry for 5 to 7 minutes or until tofu is browned. Stir tofu and olives into couscous. Transfer to a serving dish. Top with cheese. Makes 4 servings.

Moroccan Tofu Couscous

1 tablespoon olive oil
1/2 tablespoon margarine
1 lb firm tofu
1 (16 ounce) package frozen mixed vegetables, carrots,cauliflower,&,asparagu...
1 (15 ounce) can garbanzo beans
1 teaspoon vegetable bouillon granules
1 cup water
1 teaspoon mild curry powder
1/2 teaspoon cumin
1 cup dry couscous

Heat oil in skillet over medium heat. Add tofu; cook until tofu is firm, stirring constantly. Add vegetables, beans, bouillon, water, curry, and cumin. Bring to a boil. Reduce heat and simmer 8 minutes or until vegetables are done.

Meanwhile, in a medium saucepan combine broth and margarine, bring to a boil. Stir in couscous.
Cover; remove from heat. Let stand 5 minutes. Fluff with a fork before serving; spoon onto patter.

Top with tofu mixture; sprinkle with parsley.
