Does anyone have a recipe for marshmallows that uses marshmallow root?!


Question:

Does anyone have a recipe for marshmallows that uses marshmallow root?

or if you know the appropriate substitution of powdered marshmallow for gelatin. I'm not interested in making agar marshmallows, I'm looking to utilize the plant for candy & medicinal purposes.

Good old Uncle Phaedrus has already dug up the original recipe for 'modern' style marshmallows using real marshmallow root and they are NOT vegan<sigh>. Here's the link:

You can *try* to ask him for a vegan recipe but I'll warn you that he gets *really* cranky about us<g>. Follow his rules to ask exactly to the letter or else. '-)

In Egypt I've had the 'ancient' style marshmallows that are basically marshmallow sap boiled with honey (or sugar). That stuff is NOTHING like we think of when we hear marshmallow!

You can duplicate the old style stuff by mixing enough root powder into water to make a 'slime' similar in texture to the goo you get from freshly cut okra (okra is also an Althea), add raw sugar in the typical ratio for heavy syrup and boil to soft ball stage. When the mix is cool enough to work begin working the syrup as if you were making fondant. This link may help if you aren't familiar with candy making:
